Macadamia is the iconic Australian nut with its creamy texture and buttery flavour, however, there are numerous native nuts grown around Australia which are just waiting to be discovered by the mainstream market. Typically, processing can be an issue for native nuts like the Bunya nut and pindan walnut, and technological challenges need to be overcome to enable the full commercial realisation of these unique and nutritious foods.
