About this seminar
This seminar will propose a thesis project that will investigate the UNESCO Creative City of Gastronomy label as a means to encourage the development of local gastronomy featuring native plant ingredients. There is significant evidence that innovative labels present an opportunity for industry participants to capitalise on consumer interest for the traditional heritage characteristics, provenance, and quality of native plants-based foods. Tucson Arizona, seen as an exemplary success of the global UNESCO program, has been selected as a case study through which to explore the potential for the Creative City of Gastronomy label to protect and promote native plant gastronomy. Research will analyse the potential of similar labels to encourage markets, including within Queensland, that support sustainable development practices through cultural activities of gastronomy.
