Prof Stan Kubow
Prof Stan Kubow from McGill University, Canada, and his team use a dynamic human gut model to examine the biotransformation of phytonutrients and the bioactivities generated from phytonutrient metabolites, as well as the biotransformation and tissue toxicities of chemical toxins such as polychlorinated biphenyls. The Centre will draw on this expertise in the areas of food safety & toxicology and bioavailability & nutritional quality
